Back in the old days, everyone made all their own food - or swapped things. You didn't buy chutney from the store - you made it, or you swapped your neighbour some eggs in order to get a few jars of hers. But now, everything is from stores and it's not going to take very long before kids (kids these days....) think that, well, tomatoes grow in cans, don't they?
And mayonnaise comes from a plant...
If you're living in a place where you can't get hold of some items of food, your only option is to... go without or make it your self. There is mayonnaise in the Solomons, but it's rather expensive - everything is. Whether or not you would use this recipe because you too live in a place where mayonnaise cannot be come by cheaply, or if you find yourself, at home, alone, unable to go to a shop, and in desperate need of mayonnaise, here it is.
Crack two eggs into a blender and blend for a while - till it looks all yellow and well mixed. Then slowly drizzle a cup of oil (I use canola oil) into the eggs which are in the blender while the blender is going.
By the time you've poured all the oil in, it will be making a glug-glug sound; keep blending until it stops glug-glugging. Then stop the blender and add various things to add flavour. Experiment a little, but for the first time you might like to try my favourite combination - crushed garlic, salt and pepper and a splash (a big one or a little one depending on taste) of Balsamic vinegar.
